Sous Chef & Recipe Assistant / Cookbook Project

About the Role

A published cookbook author is seeking a skilled Sous Chef & Recipe Assistant to help create an upcoming American Wagyu beef-focused cookbook. This seasonal, hands-on position takes place in a private home at the exclusive Madison Club in the Coachella Valley, running from November to April.

Compensation: $40–$60/hour, depending on experience.

The ideal candidate will be both a creative culinary collaborator and a meticulous record-keeper helping develop and test American Wagyu beef-centered recipes along with thoughtfully paired side dishes. You’ll ensure that ingredient measurements, methods, and instructions are accurate, practical, and clear for the general public while cooking alongside the author.

Key Responsibilities

• Act as sous chef during recipe development - handling prep, cooking, and plating.
• Assist in creating, refining, and perfecting American Wagyu beef recipes with complementary side dishes.
• Evaluate ingredient measurements, cooking times, and methods for clarity and realism for home cooks.
• Track and document recipe versions, testing notes, and feedback in detail.
• Shop for premium ingredients and maintain pantry/kitchen organization.
• Maintain a clean, efficient, and organized kitchen environment.
• Communicate clearly and collaborate closely with the author.

Qualifications

• Proven experience as a sous chef, recipe tester, or culinary assistant.
• Familiarity with side dish development and pairing for multi-course meals.
• Ability to assess recipes for clarity, practicality, and home-cook friendliness.
• Skilled in precise cooking techniques and recipe execution.
• Highly organized, with excellent note-taking and documentation habits.
• Comfortable with both independent work and close collaboration.
• Willing and able to travel to Coachella Valley 3 days/week (overnight stays if needed).
• Reliable transportation required.
