Open continuously since 1924, the original Echo Inn, a roadside stand owned by Echo Mumpower, served spirits to the local loggers. Sometime later, a building was erected over the original train trestle. The place changed hands twice before “Mac” who owned it for 29 years expanded the menu to include pre-made cold sandwiches. The next owner, Shelly’s father Sam, added canned chili, hot dogs, and burgers to the menu – not exactly homemade fare! In 1986, Shelly took over the business from her father and brought true homestyle cooking to Carver.
