Role Purpose Statement The Specialty Sous Chef (Halal) supports the Executive Chef in producing high-quality halal-compliant meals for airline passengers. This role ensures strict adherence to halal standards, food safety regulations, and airline catering specifications while managing kitchen operations and staff. Main Accountabilities Key Responsibilities:- Halal Menu Development: Collaborate with the Executive Chef to design and update halal-compliant menus tailored for airline passengers, considering cultural preferences and flight duration.
- Meal Preparation: Oversee preparation and cooking of halal dishes in compliance with airline catering standards and halal certification requirements.
- Compliance & Documentation: Ensure all ingredients, suppliers, and processes meet halal certification and airline regulatory standards. Maintain accurate documentation for audits.
- Production Efficiency: Manage large-scale meal production for multiple flights while maintaining quality, consistency, and timely delivery.
- Inventory & Procurement: Monitor stock levels, order halal-certified ingredients, and minimize waste in a high-volume environment.
- Team Leadership: Train and supervise kitchen staff on halal preparation techniques, portion control, and airline-specific packaging requirements.
- Quality Assurance: Conduct regular checks for hygiene, food safety, and halal compliance throughout the kitchen and production line.
- Customer Satisfaction: Address special dietary requests and ensure meals meet airline and passenger expectations.
Leadership
- Ensure that the area of responsibility is properly organized, staffed and directed
- Guide, motivate and develop the subordinate employees within the Human Resources Policy
- Make the company's values and management principles live in the department(s)
- Implement and control the cost budget in the area of responsibility; initiate and steer corrective actions in case of deviations
- Participate and support company sponsored initiatives such as Global Quality Standard (GQS), HACCP, Lean Manufacturing
- Culinary degree or equivalent professional experience.
- Minimum 3 years of experience in airline catering or high-volume food production, with expertise in halal cuisine.
- Strong knowledge of halal certification standards and airline catering regulations.
- Leadership and team management skills.
- Ability to work in a fast-paced, high-pressure environment with tight deadlines.
- Excellent communication and organizational skills.
- Arabic speaking preferred (to communicate effectively with suppliers, clients, or team members when needed).
