General Summary:

The Executive Chef is directly responsible for all food service production personnel and operation of the kitchen and back of the house responsibilities. The Executive Chef ensures a high quality dining experience to Senior Star residents. Responsible for the safety of our residents. Responsible, with all other Senior Star employees, for the leasing and marketing success of the community. Conducts business according to the Senior Star Mission, Values and Goals.

Essential Job Functions:

Responsible for Providing a High Quality Dining Experience

Supervises a food services program that meets and exceeds the minimum requirements of a Senior Star community

Prepares menus, food products and serves high. quality meals in all dining rooms and dining venues, following meal presentation standards

Provides meals to residents in a prompt and professional manner

Ensures that food items are served at the proper time and temperatures and tastefully garnished

Provides food production for all housing segments to include independent , assisted and memory care.

f. Provides for food production for catering services, both in-house and externally.

Regularly ensures completion of a food and supply inventory

Plans and promotes a dietary food services program that incorporates a wide variety of tastes, following menu requirements

i. Follows prime food vendor regulations

Coordinates with the Executive Director and the Food and Beverage director to plan or change menus

Maintains proper records

Prepares meal cost summaries

Ensures that the department adheres to budget guidelines

Purchases all food, kitchen supplies and kitchen equipment, using diligent and competitive purchasing programs and methods

Managing food production and sanitation processes within expense guidelines and assists in developing revenue enhancing opportunities for food and catering services.

Prepares meals using provided recipes, following menu requirements

Uses equipment in a safe manner

Prepares food items for serving

Checks serving line before serving to ensure everything is in optimum condition

u. Maintains high level of professionalism with residents and staff

Follows all health department guidelines, safety practices and infection control practices

Coordinates with special needs of the site and residents

Understands emergency response procedures

Responsible for Overseeing the Sanitation and Regulations of Food Service

Maintains knowledge of health department, state and federal food operation regulations.

Ensures prompt receipt, inspection, washing and storage of all food items

Oversees preparation and serving of meals in accordance with proper temperature and procedures

Ensures that proper sanitized cleaning solution and procedures are used when cleaning pots, pans, etc.

. Directs general kitchen and dining room sanitation and routine preventative maintenance on equipment .

f. Ensures compliance with all state, local or federal rules, regulations or licensing requirements related to health, safety (OSHA) and general operation of the department

g. Provides and reviews documentation and reports as required

Responsible for Supervising Food and Beverage Employees

Prepares and posts work areas and cleaning schedules for all shifts for all kitchen and dining room staff

Recruits, screens and interviews applicants

Trains and retains a full dietary staff who are capable and motivated to provide an exceptional dining experience to all residents and guests

Ensures that servers are performing attendance checks at all meals

Trains staff on all emergency procedures

Conducts a minimum of six (6) in-service workshops per year

Ensures that all employees present a professional demeanor to residents and guests.

Responsible for Interacting with Residents and Other Departmental Staff

Walks around the dining room during each seating to answer questions from residents and resolve issues

Handles all resident complaints

Coordinates with the Program Director or Executive Director to plan special events

Places a suggestion box inthe community in order to receive feedback from residents about the dining experience

Attends staff and resident meetings to report and advise on dietary matters

f. Presents a professional demeanor to current and prospective residents

Performs various tasks as requested by the Executive Director

A Senior Star Food and Beverage Director may be given additional duties and responsibilities.

Hours

Varied, ensures that the dining room responsibilities are covered 7 days a week.

Required Education, Knowledge and Skills

Education or training in the Culinary skills and the Food Service field

Must hold and maintain a ServSafe certificate

Computer skills preferred

Strong oral, written and interpersonal communication skills required

Knowledge of food preparation and serving, pilferage and portion control

Knowledge of productivity, costs and budgets, purchasing and receiving

Knowledge of proper sanitation techniques and storing systems
